Temps here in N Florida have dropped a good bit, have some cold, rainy weather going on since yesterday and into today. Perfect day for some chili and decided to try out a new recipe for Cowboy Chili, courtesy of Cowboy Kent Rollins.

Giving this a go, just threw everything into the crock pot and letting it cook up for about 45 min to an hour.

Damn fine chili. That is a great and easy recipe for just this sort of weather. I followed the instructions to the letter, except for the can of chilies in adobos sauce, because I knew they would be spicy and Jen isn't a fan of overly spicy food. His recipe called for a can, which is about 1/2 cup, but I only used half of the can, so roughly 1/4 cup. It was good enough that I could still get just the faintest hint of spicy/hot and yet was mild enough that Jen could enjoy it.

I will definitely make this again in the future. Had enough from the crock pot for us to have about a bowl and a half each, and still had enough left over to put some in the freezer for later on, and for Jen and I to have some for lunch on Monday.

Our weather on Friday is supposed to be about 37 degrees and windy. Dammit. It'll be a good day to cook some chili so I'll try that recipe!

Its 33 degrees and windy (wind chill 21) with off and on snowflakes blowing through. I whipped up the chili per the recipe. The dash of cumin and full can of chipotle peppers in adobo sauce provided quite the distinct flavor. Mixed in a bowl with crushed saltines, shredded cheddar, and a bit of sour cream with a cold Spotted Cow on the side made for a most excellent chili experience! Next time I might go with half a can on the adobo as Lisa is a bit less tolerant of spice than I am. She enjoyed the chili but I think backing off a bit would be a good experiment. Either way it should still be good! 8-)

Glad to hear it was enjoyable. Yes, the chilies in adobos can give it quite a kick. We have some cold days coming up this week, I have a nice size container of the leftover chili in the freezer that I'll break out and have for lunch.

Simon Sinek, on the imbalance and problems related to social media addiction. I think he makes a very good point about the younger generations and the difference between "entitlement" and "impatience". I can see the slope in my own daughter at the age of 7, I know 100% that if we do not parent, and we don't monitor or regulate what she is allowed to watch or do with an ipad or videos on Kids Youtube, that she could easily end up as he describes.

This is a cool channel on YT (Kings and Generals), dedicated to talking about a variety of historical subjects. This one in particular is of interest to me; I've always had a fascination with the lost remnants of the Great Library. I wonder just how much historians could have learned about the past, had we been able to see the items that were destroyed.
