Gelatinous Cube - A Unique Description

This evening I was briefly scanning through a PDF of the AD&D 2e DragonLance supplement, More Leaves from the Inn of the Last Home which was published during 2000, just after WotC took over from TSR and doesn't mention who wrote the material, but the cover and spine show that it was edited by Weis and Hickman.

One section of the book is titled, 'Notes on Various Monsters: Slugs, Fungi, Molds, and Other Things...I Hope To Never See Again'. One entry is for the Gelatinous Cube, in which it describes the monster as a "plant and fungus". I think that's the first (and only) time I've ever heard of the cube classified as such, but wondering if there are any other sources or info to back this up.
